help with creating syllabus for book making class

Hello! I have just recently joined this group, and I am looking for some assistance. I have previously taken a book making class, and learned how to do book binding. I also have made photocopied zines and many delicate hand made books that were more artful than readable. I have been given an opportunity to teach a book making class to senior citizens, and if the class is successful, I will be able to continue teaching. Next Spring I would like to teach an organic paper making class. What I need help with, is devising a simple syllabus that will be straightforward for senior citizens. I want the components of the class to be both simple, and focused on allowing the students to be creative with their projects. I want to ensure that paper layout is straightfoward, and that binding methods are not too complex. Any suggestions? Book suggestions? Links? All help is appreciated!

    where in cali are you?
    are you planning on having them make art books- or books they can use for journals and gifts/ nothing on the pages?
    if art books maybe start with page layout and 8-fold style books and then move up to single binds and then maybe a "final" with two signatures.
    if "journals" start with maybe cover design and then move into the 8 fold and then up to bindings...
    just some thoughts- i still have my readers from all of the book making and paper making classes i took, but we would have to meet and you would have to photocopy the pages you are interested in, maybe the syllubusses are stioll in them, dunno, but the lessons are pretty strait forward if i remember correctly.
    i was studying with harry reese in santa barbara- he and his wife make some of the most beautiful art books i have ever seen and had the pleasure of touching!
